🥣 Ingredients:
90g | 1oz | 1/2 cup bulgur wheat
1 onion
1/4 lb | 113g | 1 small sweet potato
2 garlic cloves
240g | 8.5oz | 1 1/2 cup cooked chickpeas (1 can)
20g | 1oz fresh parsley
1tsp ground coriander
1/2tbsp ground cumin
1/2tsp baking powder
1tbsp psyllium husk

🥣 Sause ingredients:
125ml | 4oz | 1/2 cup dairy-free yogurt
1/2 cucumber
black pepper & salt to taste

🧑‍🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗You can substitute yoghurt sauce for salsa or any of your favourite dip sauce.

🥣 Method:
Place 90g | 1oz | 1/2 cup bulgur wheat in a bowl and add 60ml | 2fl oz | 1/4 cup boiling water.
Set aside for 5 minutes.
Slice 1 onion, add to a lightly oiled skillet and cook until translucent.
Grate 1/4 lb | 120g | 1 small sweet potato.
Chop 2 garlic cloves.
Add to the skillet and cook for about 3-5 minutes.
Add 240g | 8.5oz | 1 1/2 cup cooked chickpeas (1 can), vegetable mixture and 20g | 1oz fresh parsley to a food processor.
Blend until pureed.
Add bulgur.
Season with 1tsp ground coriander, 1/2tbsp ground cumin.
Add 1/2tsp baking powder, 1tbsp psyllium husk and salt to taste.
Set aside for 5 minutes.
To make sauce combine 125ml | 4oz | 1/2 cup dairy-free yogurt, 1/2 of shredded cucumber, salt and black pepper.
You can make veg patties and/or veg balls.
To make veg balls shape the mixture into balls.
ℹ️Each ball should be about 1oz | 25-30g.
Transfer to a baking tray.
Spray or drizzle with oil.
Bake in the preheated oven at 425F | 220C for 15 minutes.
To make veg patties form the mixture into patties.
ℹ️Each patty should be about 2oz | 60-70g.
Deep fry until golden brown for about 2 minutes on each side.
ℹ️You can use an air-fryer or fry with a little oil if you like.
Top up with dairy-free yogurt sauce or your favourite sauce and enjoy! 😋
